The default for Hoster is to start with def001.hst. If you leave the songs on the list when you close, then re-open Hoster the same list will still be there. If you don't want that list and click new then it creates def002.hst. If you keep doing this each time then yes you will wind up with a bunch of them. Hoster will always save the playlist so if there is a catastrophe you can re-open Hoster and continue on from where you left off. So to simply answer your question - No, there is no way to keep Hoster from saving the playlist. In fact Hoster doesn't only save it when you exit Hoster, but saves it every time you made any change to it (add a song, delete a song, move a song, etc).
You say you have named playlists you use. Then what you need to do is delete all the def00_.hst files. Then when you open Hoster it will open with a new empty playlist (def001.hst). Then go to File/Open and bring in the playlist you want. If when you close Hoster your named playlist is still in it then when you open it again it will still be there (no def file). Do this each time without ever clicking new and it won't create any more "def00_.hst" files. Just remember that every time you click File/New it will create another "def00_.hst file.
As far as Hoster creating backups of your playlists when you install an update that is not true. When you install Hoster it does not do anything with the HST files. If you use the Remove in the installer those files are not deleted and when you re-install none are created.
