An option that would permit you to boot to the back-up drive may be to use a bootable USB drive as the back-up drive. Here's some dope on that:

Dunno, as I have no personal experience with it, but it seems plausible.

I'm going to go with the raid set up. I see two major advantages to this:

1. The raid system will keep a mirrored copy my C:\ drive on the second drive. Any changes I make to the C:\ drive will be made to the second drive as well. I won't have to connect and disconnect the drives to add new data.

2. If my C:\ drive fails, the raid system will start using the second drive automaticaly. I won't have to open my computer and switch drives, I should be able to just keep running my show, replaceing the bad drive when I got home.

I don't have the time to research the bootable USB drive so I don't know how much trouble it would be but if it works, it would be better than the backup system I have now which turned out to be none. Thanks for posting this info, it may help somebody else.
