Question Editting MIDI Files

You guys have been so helpful. My Edirol Sound Canvas arrived Suturday by FEDEX (I didn't pay for special delivery). I have found many very good quality however, I have been looking for one particular song, “Bring it on Home to Me” preformed by either Sam Cook or the Animals. I have only found a few and they are not very good. I try changing the instruments to resemble a 60s era rock and roll band, guitars, bass guitar, drums, and keyboard, but it doesn’t come across that way. When I change the instruments channels that were once silent become active and those that I changed become inactive. When I finally get it to start sounding the way I want it and replay it, it reverts back to the original. I’m sure this is an easy project, but music editing is very new to me. Can anyone offer a suggestion?

P.S. I do like the oldies: Animals, Stones, Otis, Doors and the like. So I will use this combo KPRO & MIDI often. Everytime I hear one on the radio, I say, "I remember that one." Oh, the memories.
