Need a little more info. When you say not all of the cables are delivering stereo sound, do you mean the signal cuts out? Not sure what you mean. The cables can be tested for continuity if you think they may be bad. A simple check with a inexpensive multi-meter will work. Another suspect problem is the small headphone out jack on your computer where I assume you plug your stereo cable to feed your mixer. These jacks are kind of delicate and it is not uncommon for them to start acting up. An alternative would be to use an external sound device that is fed via a usb cable and then from the device to your mixer with the same cables you are presently using. These devices are inexpensive and can be found on Amazon for example.
