This has been discussed before. I suggested then, and still believe, the best way is to physically eliminate the USB ports. Either with a lockable case that does not allow access, or removing the cabling from the inside. They also make physical port locks like this http://www.katerno.com/detail/s/7427.../USB-Port-Lock

The best you can hope for is to slow them down enough that they can't get it done during a show. Then secure your equipment the minute the show is over.
