This has been discussed before. I suggested then, and still believe, the best way is to physically eliminate the USB ports. Either with a lockable case that does not allow access, or removing the cabling from the inside. They also make physical port locks like this

The best you can hope for is to slow them down enough that they can't get it done during a show. Then secure your equipment the minute the show is over.
